I changed the recipe for a pineapple upside down cake and made a dried bananachip/granola upside down cake. I really had to think about this cuz the original recipe is Betty Crockers Dinette cake, which is for an 8x8 pan and I had it started in a 9x13! The top is easy just add more butter and cover it with granola (maple nut flavor) and banana chips. I substituted some of the shortening for sour cream(2x's volume), used almond milk(soak the banana chips for awhile) instead of cow's milk and added a mashed banana. It turned out rich and delicious! This sound like the kiss of death to my diet *lol* Banana chips and granola and maple sirup (mayb also some cocosnut flakes?) - ohhhh so yummy ;o)

Yes, no diet here. I stick to small pieces and bites. Next time I will use half setivia. I think you could also use whole wheat flour and still be very tasty.

I also added maple syrup to the batter. Maple flavor would be best.
