I have been asked for my Zucchini Bread recipe so for those interested here you go:

2 1/2 cups shredded zucchini (about 2 medium)
1 cup unsweetened apple sauce
1/2 cup canola oil
3/4 cup fat-free egg product or 3 eggs
2 teaspoons vanilla
1 1/2 cups sugar
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped walnuts or pecans or chocolate chips your choice of chips
Directions
Step1 Heat oven to 350°F. Spray bottoms only of 2 loaf pans with cooking spray.
Step2 In large bowl, mix zucchini, apple sauce, oil, egg product, vanilla and sugar until well blended.
Stir in all remaining ingredients except walnuts until well blended. Stir in walnuts (or chips) Spoon batter evenly into pans.
Step3 Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 1 hour. once cool they will pop out of pan by turning it upside down. I hope that you like it & post if you make it too.

Sounds great! One year I had zucchini everywhere and found a tip that stated to shred it and put into 2 cup portions into zip lock bags and freeze. I did and I made all winter long every zucchini recipe I could find.. As I think back , the zucchini breads were the best. Thanks for sharing. I will try it. Kay

No I need to work out what is baking soda and canola oil, I use baking powder regularly so know what that is

Baking soda is bicarbonate of soda. Canola oil is a healthier version of oil. Vegetable oil can be substituted.
