UPDATE: I think I need recipes that require lots of lemons. I have already frozen juice and supplied the neighborhood.

I have gained 5 pounds trying a few of those wonderful ideas what to do with my abundance of Meyers Lemon. Thank you to all who contributed. Could use some "lose weight easy " suggestions. 😊😊😊

lemon spread or some call it lemon butter. but it uses a few eggs. Also I love maramalade. recipe is 2 lemons, 1 grapefruit, 1 sweet orange. 3 pounds of sugar to 3 pints of water. I am ever so slightly envious of your fabulous tree

Just baked another lemon cake. Family is coming over. I have dehydrated slices for tea in the future and pulverized the dehydrated rinds. Still have to try marmalade. Maybe tomorrow.

Beautiful send me some hehehe... I would love this in my yard but it is too cold in the winter here. Happy baking! I freeze the juice and use a rasp on the peel. I dry the peels for later and take out the juice from the freezer when I need some.

Yummi, have you ever tried lemon-ginger syrup for lemonade or garlic-lemon-ginger paste or lemon-onion cough syrup ? A longdrink with elderflower syrup, lemon juice and Tonic Water or Bitter Lemon and a dash of Wodka or Dry Gin, hmmmmmmmmmm.
Many recipes on You Tube,
happy cooking, hugs

Very interesting. I had never heard of the above. I will investigate. Thank you

Looks, like the tree surviwed the frost in 12-2017. I forgot to mention the Moroccan Saltlemons. Very aromatic and interesting in chickpea salads, meat dishes, mixed salads, hugs

Thank you. Good idea. I already freeze them in ice cube trays and pop a cube in my drinking water. Makes it more pleasant.

Google Shaker Lemon Pie -very different and tart pie and uses slices of lemon, not just the juice, so a very pretty presentation. Congratulations on your bumper crop.

I love Lemon Delicious ( a pudding style dessert). Lemon Meringue Pie, and a Donna Hay recipe that I use that's light and fluffy. I am sure there are lots of other recipes to use up those delicious lemons. Love Chris

Here is Donna Hay's recipe and there's only 3 ingredients!!!

LEMON PUDDING
500 ml single cream (runny cream)
110 g caster sugar
80 ml lemon juice
raspberries, to serve
1. Place the cream and sugar in a saucepan over medium heat and bring to a simmer, stirring occasionally.

2. Allow to simmer for 6 minutes or until the cream has reduced slightly. Add the lemon juice and simmer for a further 2 minutes.

3. Pour into 180ml capacity cups, glasses or ramekins and refrigerate until set. Serve with fresh raspberries.

For those who don't use Metric measurements here are the Imperial measurements -
2 cups single (pouring) cream
½ cup caster (superfine) sugar
â…“ Cup lemon juice
Raspberries, to serve

What about lemon curd delish..

crafter2243 by crafter2243 13 Dec 2018

I love Lemonade in the summer, but right now I prefer hot chocolate. Hopefully the frozen juice will become lemonade.

Lemon Curd. Yes I already have some in the fridge and a thought just occurred to me. I could give some away as gifts.
