Hi Cuties. this is recipe for BEETROOT RELISH requested by Loralye it is very easy to make
1 bunch of beetroot ( about 4 reasonable size beets)
Zest of 1 or 2 Oranges (i also use the Juice)
1 cup Brown Sugar and
1 cup of Vinegar (brown or White)
Cook the beets till tender...cool slightly then wearing rubber gloves peel the beets... the skins will just slide off then grate the beets into a saucepan with the vinegar, brown sugar zest and orange juice...bring to the boil and reduce the heat and reduce until the mixture has thickened (approx 20 minutes) cool and bottle in sterilised jars it makes about 3 small jars keeps for ages in the fridge......enjoy.soozie
